Cooking with Kuji: Lauren Lovatt's Goji Berry Tarts

Delicious goji berries, coconut and walnuts meet our most versatile blend for this sumptuous Goji Berry Tarts recipe. Created for Kuji by the talented Lauren Lovatt.

Goji Berry Tarts




1 cup goji berries

1 cup toasted coconut

1 cup toasted walnuts

1 cup cultured oat flour

1⁄4 cup melted coconut oil

1 pinch salt

1 lemon zest



  1. Soaked the goji berries in warm water for 30 mins.
  2. Pulse the base ingredients in a food processor leaving out the coconut oil.
  3. Once a dough is formed, stream in the coconut oil.
  4. Taste and season.
  5. Press the dough into lined tart tins.




1/4 cup KUJI Natural 08

1/4 cup coconut yoghurt

1/4 cup hempseed

1 cup water

1/4 cup honey

1/4 cup melted coconut oil

2 tbsp melted cacao butter

1/2 tsp vanilla

1 pinch salt



  1. Blend hempseed, KUJI Natural 08, coconut yoghurt and water together until smooth.
  2. Add honey and vanilla and saving the Oils.
  3. Stream the melted coconut oil and cacao butter into the mix.
  4. Season with salt.
  5. Pour the into the tart shells.
  6. Leave to rest in the fridge overnight to set.

To serve

Take your Goji Berries Tarts out of the fridge, garnish with fresh berries… and enjoy!
